East Fife took a 15th-minute lead with a Lauren Wheatley lob over Kirsty Jeffries.
The advantage was held through to half time, despite Nicole Rutherford forcing Klaudia Walas into a good save and Alana McMillan missing following a goalmouth scramble.
Rutherford did level early in the second half, heading home an Ellis Notley corner.
The in the dying minutes, Shannon Leishman’s effort from the right wing dropped over the East Fife keeper and into the corner of the net.
Alfie Smith, Hibernian Development Manager said, “We made hard work of it, no doubt about that, but the girls produced in the end.
“I think we had the lion’s share of the possession and we dominated the ball. East Fife struggled to get out of their half at times. They made it tough for us though, defended really well and restricted us to a lot of half-chances. But in the end, I think we deserved it.”
Alana Marshall, Hibernian Development Captain reiterated the determination that both the first team and now development team showed in both their finals. “It shows a lot for a team to go 1-0 down, especially after just ten minutes or so” she said. “To come back and score and win 2-1, I think it shows a lot of determination and grit to do that.”
The result completed an amazing clean sweep of League Cups in June, as Hibs Development team’s success was added to those of their U-13s, U-15s, U-17s and 1st team.
Wednesday also saw Hibs make further inroads to Glasgow City SWPL leadership when beating Stirling University 5-0.
Lizzie Arnott scored from the spot either side of the interval, Lucy Graham followed up Claire Williamson’s shot against the woodwork to finish, with Heather Richards and Abigail Harrison also getting on the scoresheet.
